Hello, everyone and happy Saint Patrick’s Day. I put a lot of thought into how to handle the next episode of Atonement in Zugzwang. You see, I asked Robbie Cheadle for a recipe to use to drive the next installment. I randomly chose the “three things” that drive that episode from Robbie’s recipe below.
All things combined, my post was rather large, and I wanted to make sure Robbie and her recipe were properly featured. Today, I elected to separately post the recipe that she generously wrote, just for this serial. The dish is perfect for this cold St. Patrick’s day.

Black Bean & Vegetable Soup

Recipe for black bean and vegetable soup
Ingredients
(Note from Teagan: As I understand it, in the USA courgettes are better known as zucchini.)
500 grams dried black beans
2 x red onions, chopped
250 grams sliced button mushrooms
900 grams of mixed red pepper, butternut, and courgettes (baby marrows), chopped
5 large carrots, peeled and chopped
8 cups chicken stock (you can also use vegetable stock)
Salt and pepper to taste
2 x 400 gram cans diced tomatoes
3 x Tbspns ground sweet paprika
1 x Tbspn garlic flakes
1 x Tbspn ground cumin
1 x Tbspn ground coriander
Olive oil for cooking
Method
Pour the black beans (2 ½ cups) into a large pot. Add 12 cups of cold water and 1 Tbspn of olive oil. Bring to the boil and then turn down to a simmer. Cook for three hours. Drain and rinse with water until the runoff water is clear.
In a large pot, sauté the red onions in a little olive oil. Add the mushrooms and cook for approximately 5 minutes. Add the chopped red pepper, butternut, carrots, and courgettes. Cook for 15 minutes. Add the two cans of diced tomatoes. Add the salt, pepper, paprika, garlic flakes, cumin, and coriander and simmer for a further 10 minutes.
Add the chicken or vegetable stock. Bring to the boil and then turn down and simmer for 30 minutes until the vegetables are very tender. Add the black beans and simmer for a further 5 minutes. Serve with fresh white bread.
